There’s a glut of potatoes in BC and Canada.
With Covid raging on and on, the restaurant business has come to a halt. With it, the consumption of potatoes - fries, hash browns, mash potatoes etc etc.
Media across the country is asking people to eat and buy potatoes to help out. Noted.
Here’s my 2 cents worth - I want to help but I am in no way inspired to go out and randomly order potatoes at my neighbourhood joint without a motivating reason.
For the record, I like potatoes - who doesn’t like fried delicious carbs??
My unforgiving summer clothes, that’s who. BUT I would willingly dedicate money and time to work it off, eat better afterwards, blah blah blah IF the item is nothing short of potato art.
Think back to Night Market. Which food vendor was arguably the busiest seller?
Yup, that’s right - ROTATOS.
A.k.a. deep fried potato slices skewered on a stick. To make it fun, there are choices of optional spices to sprinkle on top. It’s like a GIANT crispy french fry. On a stick. What is there not to like.
Rotatos didn’t come cheap at Night Markets. We’re talking on par with a fully loaded cheeseburger, if not more. Except a single potato costs like 30 cents. The margin of cost is incredible. Well done Rotato peeps.
Despite all of that, people lined up and bought them like hot cakes. Know why? Because people were buying an experience. They were paying for creativity, food art for the masses.
My challenge to BC restaurants, food trucks, cafes - turn a potato into edible art. Let’s see your creativity and problem-solving skills at work. Then SELL SELL SELL, 2 meters apart.
